Salmon Pasta

Ingredients

  • 2 packages of Linguine (or Fettuccine or Spaghetti)

  • 1 stick (8 Tbsp) of butter
  • 4 cups (32 oz) of whipping cream

  • 500-800 g of smoked salmon cut into pieces
  • 2 egg yolks
  • 4 Tbsp grated or shredded Parmesan cheese
  • Salt & pepper

Instructions

  1. In a large pot, bring about 5 liters of water to boil. Add pasta and cook according to package directions.
  2. While pasta cooks, in a large pan, melt butter and cook with cream for about 5 mins.
  3. Place drained pasta back into large pot.
  4. Pour butter and cream mixture into pot of cooked pasta and mix.
  5. Add salmon, egg yolks and Parmesan cheese to the pasta in the large pot. Mix together and season with salt and pepper.
