Roasted Potatoes

Ingredients

  • 10-12 red potatoes diced
  • 1 onion diced
  • 3-5 garlic cloves pressed or diced
  • 2-3 Tbsp olive oil
  • 2 tsp herbes de provence
  • pepper to taste

  • cherry tomatoes

Instructions

  1. In large glass baking pan, add potatoes, onions, garlic, olive oil, herbes de provence, pepper.
  2. Mix well.
  3. Cover with tin foil and place in oven preheated to 390F for 1 hour.
  4. Remove from oven. Remove tin foil and add cherry tomatoes. Place back in oven at 390F uncovered for 20-30 mins.
  5. When fork can easily slice through potatoes they are done. If not, place back in oven at 390F for another 15-20 mins.
