Blueberry Muffins (24 muffins)

Ingredients

  • 3.5 cups flour
  • 1.5 tsp salt
  • 2/3 cup sugar
  • 4 tsp baking powder

  • 4 eggs
  • 1/2 cup vegetable (canola) oil
  • 1.5 cups milk

  • 2 cups blueberries (frozen or fresh)

Instructions

  1. In large bowl mix flour, salt, sugar, baking powder.
  2. In medium bowl mix eggs, oil, milk.
  3. Pour medium bowl contents into large bowl and mix.
  4. Add blueberries and mix.
  5. Line two muffin tins with cupcake liners and fill each 2/3 or 3/4 full with batter.
  6. Place in oven at 400F for 25 mins.
