Ingredients
- 3 large ripe bananas
- 1/2 cup vegetable oil
- 1 cups brown sugar
- 2 eggs
- 2 cups all purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tsp vanilla extract
- 1/2 cup chocolate chips
Instructions
- In a large bowl, mash bananas and then mix in oil, brown sugar and eggs.
- In a medium bowl, mix flour, baking powder, baking soda and salt.
- Add the dry ingredients (medium bowl) into the wet ingredients (large bowl) and fold together until just mixed.
- Add in vanilla extract and mix.
- Add in chocolate chips and mix.
- Line two muffin tins with cupcake liners and fill each 2/3 or 3/4 full with batter.
- Place in oven at 375F for 22 mins.
