Banana Muffins (24 muffins)

Ingredients

  • 3 large ripe bananas
  • 1/2 cup vegetable oil
  • 1 cups brown sugar
  • 2 eggs

  • 2 cups all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt

  • 2 tsp vanilla extract
  • 1/2 cup chocolate chips

Instructions

  1. In a large bowl, mash bananas and then mix in oil, brown sugar and eggs.
  2. In a medium bowl, mix flour, baking powder, baking soda and salt.
  3. Add the dry ingredients (medium bowl) into the wet ingredients (large bowl) and fold together until just mixed.
  4. Add in vanilla extract and mix.
  5. Add in chocolate chips and mix.
  6. Line two muffin tins with cupcake liners and fill each 2/3 or 3/4 full with batter.
  7. Place in oven at 375F for 22 mins.
