Ingredients
- 3.5 cups flour
- 1.5 tsp salt
- 1/2 cup sugar
- 4 tsp baking powder
- 4 eggs
- 6 Tbsp vegetable (canola) oil
- 1.5 cups milk
- 1 cup chopped dried apricots (or can substitute with chopped apples or dried cranberries, prunes, figs, etc.)
Instructions
- In large bowl mix flour, salt, sugar, baking powder.
- In medium bowl mix eggs, oil, milk.
- Pour medium bowl contents into large bowl and mix.
- Add apricots and mix.
- Line two muffin tins with cupcake liners and fill each 2/3 or 3/4 full with batter.
- Place in oven at 400F for 25 mins.
