Apricot Muffins (24 muffins)

Ingredients

  • 3.5 cups flour
  • 1.5 tsp salt
  • 1/2 cup sugar
  • 4 tsp baking powder

  • 4 eggs
  • 6 Tbsp vegetable (canola) oil
  • 1.5 cups milk

  • 1 cup chopped dried apricots (or can substitute with chopped apples or dried cranberries, prunes, figs, etc.)

Instructions

  1. In large bowl mix flour, salt, sugar, baking powder.
  2. In medium bowl mix eggs, oil, milk.
  3. Pour medium bowl contents into large bowl and mix.
  4. Add apricots and mix.
  5. Line two muffin tins with cupcake liners and fill each 2/3 or 3/4 full with batter.
  6. Place in oven at 400F for 25 mins.
