Ingredients
- 10-12 red potatoes diced
- 1 onion diced
- 3-5 garlic cloves pressed or diced
- 2-3 Tbsp olive oil
- 2 tsp herbes de provence
- pepper to taste
- cherry tomatoes
Instructions
- In large glass baking pan, add potatoes, onions, garlic, olive oil, herbes de provence, pepper.
- Mix well.
- Cover with tin foil and place in oven preheated to 390F for 1 hour.
- Remove from oven. Remove tin foil and add cherry tomatoes. Place back in oven at 390F uncovered for 20-30 mins.
- When fork can easily slice through potatoes they are done. If not, place back in oven at 390F for another 15-20 mins.
