Ingredients
- 1-2 Tbsp olive oil
- 3-4 large chicken breasts sliced into thin pieces
- 1 tsp garlic powder
- 1 tsp Italian seasonings/herbes
- salt and pepper
- 1 cup chicken broth
- 1.5 cup heavy whipping cream
- 2 cups thinly sliced sun dried tomatoes (in olive oil drained)
- 1 cup grated Parmesan cheese
- 5-6 cups fresh baby spinach
- 2 packages of Fettuccine or spagetti or other shaped pasta
Instructions
- In large pan, heat up olive oil and add chicken, chicken broth, garlic, Italian herbes, salt and pepper. Cook for 5-10 until chicken is golden brown.
- Add cream, sun dried tomatoes, parmesan and cook for another 5-10 mins.
- Add spinach and cook for 3-5 mins.
- While cooking the above, in a large pot, bring about 5 liters of water to boil. Add pasta and cook according to package directions.
- Place drained pasta back into large pot and add the contents from the large pan. Stir/mix and serve.
