Chicken Fettuccine

Ingredients

  • 1-2 Tbsp olive oil
  • 3-4 large chicken breasts sliced into thin pieces
  • 1 tsp garlic powder
  • 1 tsp Italian seasonings/herbes
  • salt and pepper
  • 1 cup chicken broth

  • 1.5 cup heavy whipping cream
  • 2 cups thinly sliced sun dried tomatoes (in olive oil drained)
  • 1 cup grated Parmesan cheese
  • 5-6 cups fresh baby spinach

  • 2 packages of Fettuccine or spagetti or other shaped pasta

Instructions

  1. In large pan, heat up olive oil and add chicken, chicken broth, garlic, Italian herbes, salt and pepper. Cook for 5-10 until chicken is golden brown.
  2. Add cream, sun dried tomatoes, parmesan and cook for another 5-10 mins.
  3. Add spinach and cook for 3-5 mins.
  4. While cooking the above, in a large pot, bring about 5 liters of water to boil. Add pasta and cook according to package directions.
  5. Place drained pasta back into large pot and add the contents from the large pan. Stir/mix and serve.
